I kicked off my diet in late July by cutting out soda and cutting down on alcohol intake, but I knew that this probably wouldn’t be enough. I had to come up with some semblance of a plan to lose 170lbs. In fact, at this point, I didn’t even have a goal other than ‘weigh less’. Turkey and Rice Stew

I had some leftover turkey in my refridgerator and a bunch of veggies I needed to cook, so I decided to make a stew. I’ve formatted this recipe a little different. Enjoy!

Step 1: Gather the ingredients.

They include: Carrots, Scallions (Green Onions), Turkey, 2 cans of Low Sodium Chicken Broth, Chinese Five Spice, Ground Ginger, Thyme, Rosemary, Celery Seed, Salt, Minced Garlic, Pepper, Extra Virgin Olive Oil, Cornstarch and Rice.

Merry Christmas

Merry Christmas!

During the holidays, it’s easy to forget the point of the season. All the rushing around, buying of gifts and cooking of food consumes our time, and sometimes we never get a chance to slow down and enjoy this time. Try to slow down, spend time with your loved ones and remember why we all celebrate Christmas.

starting my weight loss adventure

In mid-July I finally decided that I was tired of weighing as much as I did. This time, however, was different. I actually did something about it. I will start writing about my experience of weight loss here. Maybe it will inspire somebody else, or maybe my story will just provide a nice read. One thing is for sure: I’ve still got a long way to go. I started at 350lbs; I currently weigh around 310lbs; and I’m shooting for about 180lbs.

spaghetti alla arrabiata

Long Pasta NoodlesI made this a couple weeks back. It was fantastic. It’s very, very good despite the fact that there is no meat in it. Arrabbiata sauce is a spicy tomato sauce–it’s probably my favorite no-meat red sauce. I’m sure mine wouldn’t count as a “true” arrabiata if you ask an Italian, but it’s still very tasty.

I will make this one night, and then eat it for lunch the next 2 or 3 days. This stuff is great reheated; the flavors seem to be mixed together even better! Continue reading “spaghetti alla arrabiata”

new site — try 2

I finally updated my site a couple weeks ago, but a few days ago my server was rooted. I wasn’t really thrilled with Moveable Type, so I switched to WordPress.

Anyway, here’s round two of the new version of mattsiegman.com. Let’s see if I can make it last a little longer.
